True, slow fermentation artisan sourdough as you describe so well here is the one kind of bread I can eat on the daily without any issue of drowsiness. Almost any other kind of bread does this to me even in small quantities. Not so with sourdough. Thankful for this fact as I love bread and this gives me at least one outlet to enjoy without issues. Great article, well done.
